Description

We make these mostly around Christmas, but they are also beautiful for a spring party or a shower. They are filled with my homemade jams: apricot, strawberry, blackberry and raspberries. They look like little jewels!

Ingredients

  • 1 cup Salted Butter, Softened
  • ⅔ cups Brown Sugar
  • 1 teaspoon Vanilla
  • ½ teaspoons Salt
  • 2 cups Flour
  • ½ cups Toasted Nuts (if Desired)
  • ¾ cups Jam Or Jelly, More Or Less, To Fill Indentations (about 1 Teaspoon Per Cookie)

Preparation

Cream butter and brown sugar until creamy, and then add vanilla.

In a separate bowl combine salt and flour.

Add the dry ingredients (and nuts if desired) to the butter and brown sugar.

Form 2 tablespoonfuls of dough at a time into balls and place on a baking sheet.

With your thumb, gently press an indentation in the middle of each ball.

In the indentation, place about 1 teaspoon of jam or jelly.

Bake these cookies at 325 degrees for 20 minutes. Set them on a cooling rack to cool.

Enjoy!

Made these a second time using almond flavor instead of vanilla. Delicious.

These were very easy to make and turned out really well, I made half with apricot preserves and half with blackberry jam, they lasted two days. lol. Some went over to “game night” with my S/O and now his friends are asking me to make more too. THAT’S a good recipe.

This batter is gorgeous! Wanted something quick for dessert, and this could not be easier! Left out the nuts, just didn’t have time to toast any up, but will be adding them for sure, next time. They smell wonderful and taste delicious too. Thanks!

Delicious, delicate and tasty! And so easy with just a few ingredients. I filled some with a pineapple/mango preserve, others with a blueberry jam. I also added the optional toasted nuts (finely chopped almonds). This recipe’s a keeper. Thanks!

A great cookie! Tender and not too sweet! These were easy to make…my 10 year old had no problem helping. She could have done it by herself. The dough is prefect for children to roll in their hands. We used raspberry jam for the filling and they were wonderful! Yum…will definitely make again!
