In the past I’ve made Chicken Pot Pie using almost this same recipe (with less amounts of veggies), but wanted to see if I could get the same old fashioned yumminess without the bird. If you insist on adding chicken – and some of you will, you know it – just add fewer vegetables. Either way it’s a great supper on a cold and stormy night….and the ship was sinking….

Due to allergy/asthma reactions when I eat dairy, I had to find new stuffed celery solutions. Oddly, one day, I began craving this. It was so yummy. Soon, I was regularly craving the entire celery stalk … and I only dip my celery tip in the chocolate!

Who needs noodles? This recipe came to me shortly after my test results came back positive for celiacs … and it’s wonderous. Thinly sliced zucchini take the place of the noodles. And let’s all be honest, zucchini is significantly better for you than noodles. I hope you have a mandoline—it’s a lot easier to manage the zucchini, but if not, just old school it and slice ‘em thin by hand.

This savory tart is fancy and delicious and fairly thrifty. It is perfect for brunch or a luncheon with fresh fruit or salad. Use leftover potatoes and whatever type of cheese you have on hand, although try and mix sharp and mild types; I personally prefer jack cheese with parmesan or feta.
