Chicken, Artichoke, Spinach and Brown Rice Bake

by Annie Ritter and filed in Low Fat/Fat Free, Special Dietary Needs

My husband and I are currently on a serious weight loss program. I needed to come up with a low fat, high protein dish to take to a friend’s house for dinner. It was a huge hit and no one guessed that it was so low in fat and sodium.

Chardonnay Grapeseed Flour Chocolate Chip Cookies

by elanaspantry and filed in Gluten Free, Special Dietary Needs

These yummy little protein-a-licious cookies are the result of a complimentary sample of Chardonnay Grapeseed Flour that I received from Eric Leber of AprèsVin. Grapeseed flour? Yes, you heard it right, grapeseed flour.

Fudgy Black Bean “Brownies”

by myallergenfreelifestylemanual and filed in Brownies and Bars, Dairy Free, Desserts, Gluten Free, Special Dietary Needs

Despite what you may be thinking, these “brownies” actually are really good, moist, and fudgy. I wouldn’t consider them a replacement for a good old regular brownie, but they are a healthy, tasty treat and free of most allergens.

Butternut Squash, Spinach and Goat’s Cheese Risotto

by Rosy and filed in Special Dietary Needs, Vegetarian

This is oh so good! The squash takes on such a rich sweetness when roasted. It works amazingly well with the sharp goat’s cheese and fresh flavours of the lemon and spinach. It’s just really yum!

Cherry Apricot Cake

by elanaspantry and filed in Gluten Free, Special Dietary Needs

My husband loves this simple, moist gluten free Cherry Apricot Cake. I make sure to use organic dried fruit in this dessert, since pesticides levels tend to be high in conventional cherries and apricots and more concentrated in dried fruits.

Meet Nancy

Nancy is the Coupon Clipping Cook, which means she not only has an astounding number of recipes to share with us (her TK recipe box is busting at the seams!) but she's also got loads of money-saving tips in her blog (she worked at a grocery store for a number of years, so she knows her stuff). She has some pretty amazing creations, like Roasted Garlic Potato Soup and Nutty Coconut Chicken. Go check them out!

Meet Heather

Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
