Easy Skillet Enchiladas

by elise1mds and filed in Beef, Main Courses

My uncle shared this recipe with me when I got married. As a confirmed bachelor, he always enjoyed a good quick meal with plenty of leftovers. Now that he’s gone, I still make this often. It brings back great memories!

Mom’s Meatball Meal

by elise1mds and filed in Beef, Main Courses

My kids came up with the name for this after I invented the recipe out of sheer desperation one night. They request it regularly! The flavors are somewhere between spaghetti and pizza. You can easily make this meal vegetarian by substituting a can of beans for the meatballs.

Beef Pop’ems

by gardeningmama811 and filed in Beef, Main Courses

I found this recipe in a magazine back when my kids were little. This quickly became our favorite go-to dinner on nights when we were short on time. The kids still ask for these often, and I haven’t found anyone who doesn’t enjoy these easy-to-make treats!

Corn Moussaka

by elise1mds and filed in Casseroles, Main Courses

An Americanized version of the classic, this recipe calls for corn instead of eggplant and substitutes a three-cheese blend for the traditional sauce.

Classic BBQ Chicken Drumsticks

by patiodaddio and filed in Main Courses, Poultry

I’m sure I am not alone in hearkening back to fond childhood memories of sweet and sticky barbecued chicken legs cooked in the backyard. To me, this is one of the most quintessential of all-American summer finger foods—second perhaps to corn-on-the-cob. Hey, it’s yardbird-on-the-cob!

Mexican Stuffed Shells

by dragonflykitchen and filed in Casseroles, Main Courses

My mom made this for me a couple years ago, and ever since then, I crave them! They are such a nice change from regular Italian stuffed shells. They’re also good made with ground turkey.

My sister says this is the best she has ever had. It is my version of my mom’s lasagna. Don’t be scared by the vegetables, I promise it is good.

In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
