Description

Everything you would expect in a Denver omelet but tucked away so nicely into a toasted Ciabatta sandwich.

Ingredients

  • 2 Tablespoons Unsalted Butter
  • 3 whole Eggs, Beaten
  • 3 Tablespoons Hot Water
  • 1 pinch Salt
  • 1 pinch Cracked Black Pepper
  • 2 slices 1/2 Inch Thick Slices, Of Ciabatta Bread
  • ½ cups Cheddar Jack Cheese, Shredded
  • ¼ cups Onion, Diced
  • ¼ cups Green Bell Pepper, Diced
  • ½ cups Ham Steak, Cubed

Preparation

Begin by adding 1/2 tablespoon of butter into a small non-stick skillet and bring to a medium heat.

Crack the eggs into a bowl, add the hot water, and whisk with a fork until all of the yolks are evenly mixed. Add the salt and pepper. Set aside.

Spread the remaining butter onto one side of each piece of bread, and place the bread into a large skillet that you’ve set on medium-low heat. Put the bread into the skillet butter side down. Top each piece of bread with the cheddar jack cheese.

Once the butter is melted in the first skillet, add in the onions, bell pepper, and ham. Cook just until the ham is cooked through and the bell pepper just begins to soften, about four minutes. Remove this mixture into a small bowl.

Return the non-stick skillet back onto medium-high heat. Add in the eggs and vigorously mix with a rubber spatula for about 5 seconds. Continue to cook for about another minute or so to let the omelet begin to set. Use the spatula, and begin working around the edges of the skillet, lifting the skillet to move any of the excess egg mixture into the open parts of the skillet.

During this time, keep an eye on the bread as you want it to be a nice crisp, golden brown and you also want the cheese to melt. Top each piece of cheese with a bit of the ham, pepper, and onion mixture (save about half of it for the next step).

Continue cooking the egg until you no longer see any liquid on top, then add in the remaining ham mixture. Gently fold over the omelet, folding it in half.

Remove one slice of the bread from the skillet and place on a serving plate. Slide the Denver omelet onto the bread, then top it with the other piece of bread. Dig in!

If you are looking for a simple and pretty amazing sandwich to share for breakfast, this might be the one. The crunchy exterior holds the fluffy pillow of an omelet just perfectly. Then you get the tender, yet crunchiness of the green bell pepper and the saltiness from the ham and cheese. This one is sure to please with every mouthful.
