Overall, these have a very good flavor to them. The texture kinda threw us off at first because we were expecting it to be more eggy, instead it’s like a muffin (like the title says). Once we got passed that we enjoyed them They’re easy to customize too- I made half of the batch with sausage and the other half with ham. Both were good

As my son-in-law so aptly put it “these ROCK!” I think he ate about 6…They were a little hard to get out of the muffin tins though.

An easy, mix it all together dish that tastes great. I am a vegetarian, but I do eat eggs so I scooped a bit of the mixture out for myself before adding the sausage (my kids are not vegetarian). For mine, I added diced tomatoes, yellow bell pepper and jalapenos. Fantastic!

So easy & super yummy! I did mine with a maple-flavored pork sausage, which actually added a nice bit of flavor. I might add some roasted red peppers or diced tomatoes next time, but that might change the consistency… We’ll see…

Made these for my kid to take to school, for breakfast. Since I was making it for him, I catered to his taste and left out the red pepper flakes and the mustard powder. I used bacon instead of sausage, cooked and crumbled, and added in some parm cheese for a bit of salty flavor without having to add salt.
I also made them as 6 large muffins instead of a dozen regular sized. They are delicious. I like how versatile this recipe is too.
I tried to put this under “Review” with 5 mitts, but was told my review deserved moderation, so I moved it here, to the comments section, but count it as another 5-mitt review!
