Description

Light and fluffy Pumpkin Spiced Pancakes.

Ingredients

  • 1-¼ cup All-purpose Flour
  • 3 Tablespoons Sugar
  • 2 teaspoons Baking Powder
  • 1-¼ teaspoon Pumpkin Pie Spice
  • ¾ teaspoons Salt
  • 1-⅓ cup Milk
  • ¾ cups Canned Pure Pumpkin
  • ¼ cups Butter, Melted
  • 1 teaspoon Vanilla Extract
  • 4 whole Eggs, Separated

Preparation

Preheat your griddle.

Combine all the dry ingredients together. Whisk to combine.

Combine all your wet ingredients together MINUS the egg whites. Stir until mostly combined. Mine was a bit lumpy because my butter wasn’t completely melted.

Combine your wet ingredients (minus egg whites) into your dry ingredients and whisk to combine.

Beat your egg whites just until soft white peaks form. Fold into the batter.

And do what mamas (and some daddies) do best: make pancakes!

Note: To make pancakes, heat a greased griddle or skillet and drop batter onto the hot surface. When bubbles form on top and start to pop, flip and cook the other side.
