Description

Crunchy, sweet and perfect topped on yogurt or as a snack.

Ingredients

  • 3 cups Old Fashioned Rolled Oats
  • ½ cups Chopped Walnuts Or Pecans
  • 1 Tablespoon Flax Seed
  • ¼ cups Peanut Butter
  • ¼ cups Pumpkin Puree
  • ¼ cups Light Brown Sugar
  • 2 Tablespoons Smart Balance Cooking Oil Or Vegetable Oil
  • ½ teaspoons Pumpkin Pie Spice
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Cinnamon
  • 1 pinch Salt
  • ½ cups Dried Cranberries
  • ½ cups White Chocolate Chip Morsels

Preparation

Preheat oven to 300ºF. Lightly oil a large baking sheet with nonstick cooking spray and set aside.

In a large bowl combine rolled oats, walnuts or pecans and flax seed.

In a medium bowl, add peanut butter, pumpkin puree, brown sugar, oil, pumpkin pie spice, vanilla extract, cinnamon and salt. Stir until blended. Pour mixture over rolled oats and gently stir until well combined.

Spread mixture on prepared baking pan and bake on center rack in a preheated oven for 25 minutes. Gently stir mixture and continue to bake for an additional 15-20 minutes.

Remove from oven and allow to cool for about 5 minutes. Stir in cranberries and white chocolate chips.

Store in an airtight container.

LOVED IT! I made this for a holiday breakfast with my extended family and it got rave reviews. Also, my boyfriend was thrilled that we had a bunch leftover (I made a double batch) and has been enjoying it every morning. I did let the granola cool for 10-15 minutes before adding the chips & cranberries, but it was still warm enough to melt the chips somewhat, which resulted in clusters. Said clusters are my boyfriend’s favorite part!

Made this today without the cranberries or chocolate, and it’s pretty good. Without the extra ingredients it could probably use a little more sweetener. I’m planning on using it to make into a strusel topping for mashed sweet potatoes tonight.

Also, I made a half recipe, which in my oven took less than 20 minutes.
