I’m sure you’ve had pancakes with strawberries on top, but have you had them cooked in the batter? You must! Give these a try. The vanilla goes with it perfectly.
In a medium bowl, stir together the flour, brown sugar, baking powder and salt. Pour in the milk, oil, egg and vanilla (yes that’s 2 tablespoons), and mix until well blended. Stir in the strawberries. Heat a large skillet or griddle over medium heat, and coat with butter or cooking spray. Pour batter into desired size of pancakes. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side. They smell so good as they cook. The vanilla wafts up and makes the kitchen smell great. Top with fresh strawberries, syrup or jam. I ate mine with strawberry syrup. Heavenly.

I had never had my strawberries IN my pancakes/waffles until my last trip to Philly when I asked for a Chocolate Chip Waffle with Strawberries and my oh my was it yummy! Good thing strawberries are in season right now!!

Adding strawberries to my pancake batter is a favorite trick of mine! They are little bursts of flavor. One trick I also use is to add about 1/2 a teaspoon of cinnamon. Delicious!
