This is a great one-dish way to make breakfast that is different than the typical egg-breakfast casserole. It was delicious and everyone had seconds and thirds! Heats up well as leftovers, too!
Brown sausage in skillet and drain. In a bowl, mix pancake mix, eggs, milk, and vegetable oil together. Add sausage to bowl. Pour into a greased 9×13 pan. Sprinkle cinnamon and sugar on top if desired.
Bake at 375F for 20-25 minutes until it gets a little golden brown on top and an inserted knife comes out clean. Serve with syrup and butter as desired and enjoy!

I tried this last night and made a couple of changes.
I used 3/4 package of Ambassador Lil’ Smokies cut in half instead of the sausage.
I substituted 1/2 tsp Pampered Chef Cinnamon Plus instead of cinnamon sugar mix and whipped it in the batter not on top.
I added 1/4 tsp each salt and pepper.
It does not get as “golden” as I expected, but it was delicious!
