Super easy, wholesome pancakes. No boxed mix here!
Preheat griddle or skillet to medium high (it should be hot enough for batter to sizzle when poured onto the griddle). Whisk together the oil, milk and eggs. Add flours, baking powder, sugar and salt, combining until smooth. Whisk in the banana. Batter should be a little runny; if it’s too thick, add a little more milk. Spoon batter onto the griddle. Cook on the first side until bubbly and rising up in the middle, then flip with a spatula. Serve topped with fruit and syrup. Serves 4-6.
