Description

Fluffy buttermilk pancakes with applesauce and spices. These are sweet enough to not need any syrup.

Ingredients

  • 1-½ cup Unbleached Flour
  • ½ cups Whole Wheat Flour
  • ½ cups Brown Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Allspice
  • ¼ teaspoons Nutmeg
  • 1 cup Applesauce
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla
  • 2 whole Eggs
  • ¼ cups Butter, Melted

Preparation

Combine all dry ingredients in a medium bowl. In another bowl, combine all liquid ingredients except melted butter. Make a well in the center of the dry ingredients and pour in the liquid ingredients. Stir just until combined. Then stir in the melted butter.

Cook in a greased or non-stick skillet over medium-low heat until fluffy and golden brown on both sides. Makes about 12 pancakes.

I have been looking a loooonnngg time for a pancake that was healthy AND tasty. My search is over! We all loved these pancakes! To make them a bit more healthy, I used all whole wheat flour. To accomodate my lack of all-purpose flour, I added an extra tsp of baking powder and rounded my scoops of baking soda and salt. As other reviewers have noted this batter is thick, but not at all too thick. I added fresh blueberries to about half of mine, too. Give ‘em a try – these are really great!!

I made too many alterations to these to feel like I’m giving them a perfectly fair review, but I’ll give the recipe 5 mits just for being adaptable and still super yummy. I used all white whole wheat flour, sucanat instead of brown sugar, and thinned yogurt instead if buttermilk. The batter was then too thick, so I thinned it with some extra milk. But the bottom line was: these things were very tasty, mildly spicy, tender. A great pancake. Thanks for sharing!
