I have been looking a loooonnngg time for a pancake that was healthy AND tasty. My search is over! We all loved these pancakes! To make them a bit more healthy, I used all whole wheat flour. To accomodate my lack of all-purpose flour, I added an extra tsp of baking powder and rounded my scoops of baking soda and salt. As other reviewers have noted this batter is thick, but not at all too thick. I added fresh blueberries to about half of mine, too. Give ‘em a try – these are really great!!

Very yummy! Served with plain nonfat yogurt and maple syrup as toppings!!!
