Description

It looks like a muffin, but it’s just shaped like one. Really, it’s an eggy, cheesy, sausage-y bundle of joy.

Ingredients

  • 1 pound Ground Sausage, Cooked Completely
  • 12 Tablespoons Grated Cheese (or 1 Tablespoon For Each Muffin Tin)
  • 8 whole Eggs, Beaten
  • 1 teaspoon Seasoned Salt
  • ¾ cups Milk (I Used Heavy Cream Because I'm Eating No Carbs Or Sugar And Milk Has Lots Of Sugar)

Preparation

Preheat oven to 400ºF and spray a muffin tin with cooking spray. Divide sausage equally among 12 muffin cups. Put 1 tablespoon of cheese on top of the sausage. Beat eggs and add season salt and milk. Pour the egg mixture into the muffin cups until almost full.

Bake for 15 minutes. Then gently remove from the muffin tin and serve.

Baked these up this morning and they have a great flavor! I used mild Italian sausage and cheddar cheese but the possibilities are endless for mixing it up. New favorite low carb breakfast!

Easy, tasty, and a unique way to present eggs and sausage. I must admit that I cheated by using precooked sausage crumbles to save time. I had a hungry 10 year old grandson waiting. I also eliminated the seasoned salt, knowing that precooked sausage can be salty. I am looking forward to experimenting with additional ingredients like peppers, onions, and bacon.

I made these on Saturday for breakfast/brunch with Sage breakfast sausage and gruyere cheese. So easy and good that I make them again Sunday with hot sausage and 4 cheese Mexian blend. Both were terrific and so simple to put together. Not even much to clean up!!!!! Will have them often, I’m sure. Thanks for posting! I did need use 9 eggs, though, to fill all of the muffin tins.
