DELICIOUS, Easy and Great idea for breakfast. My kids devoured them this morning. I was charmed by the simplicity of pulling an english muffin out, topping it off, and broiling it. Viola!!!

This was great, and it had all my favorite things (I especially love English muffins!), but it had a bit too much mayo for me. But it was really a delicious breakfast treat!

I loved these. But I think next time I might add some onion. Migas are still my family’s favorite breakfast meal.

Just used this as egg salad last week and it was DELICIOUS!! Put it on some crusty italian bread and my hubby inhaled it. Will definitely try them for breakfast next time

These were great. The great thing about them is they make a lot! I made a batch and stuck it in the fridge and as the kids wanted it for breakfast they pulled it out, piled it on an English muffin, broiled and had a great breakfast in the time it takes to make a Toaster pastry. The first time I made this I put them too close to the broiler and the middles were only luke warm. I have four racks placement choices in my oven and I had the rack on the second down from the top. I adjusted it to the third down from the top after that and they are perfect!

These were very good! Green onion would be yummy thrown in there too. I love how easy they were.

I made these for the first time about a month ago and now my husband begs for them almost every weekend! They are so absolutely yummy and the spread is so good cold on sandwich bread for lunch. Also it’s super easy to half or double the recipe depending on your crowd. Hip, hip, hooray!

I wasn’t sure if this would go over with all of my company but everyone loved it and no one had any idea that it was actually hard boiled eggs! The second time I made these I toasted my English muffins and put my oven rack lower so that I could really heat everything up and get it nice and brown. Worked perfectly. I also love this mixture as a sandwich spread and have toasted it and served it cold. Terrific recipe for company!
