Description

Fried Garlic, Spinach and Goat Cheese Quiche is the perfect way to start your day! The creamy goat cheese is a perfect pair with the fried garlic.

Ingredients

  • 6 whole Eggs
  • ½ cups Heavy Cream
  • 1 pinch Pepper
  • 1 pinch Salt
  • 1 pinch Nutmeg
  • 2 bunches Fresh Spinach
  • 2 Tablespoons Water
  • 3 cloves Garlic
  • 5 Tablespoons Olive Oil
  • 2 ounces, weight Goat Cheese Crumbled

Preparation

Preheat your oven to 350ºF and grease 4 ramekins.

In a medium bowl, whisk together the eggs, cream, pepper, salt and nutmeg. Set aside.

Wilt the spinach in a small skillet with the water. Once wilted, drain the water and add the spinach to the egg mixture.

Cut each clove of garlic into 4 large pieces. Add the olive oil to a pan and set over medium high heat. Add the pieces and fry for about 1 minute, or just until the outside of the clove turns the faintest golden color. Remove from the oil with a slotted spoon and add to the egg mixture.

Crumble in the goat cheese and then divide the mixture between the ramekins.

Bake for 25–30 minutes and then serve.

I am so excited to see this recipe. I just recently have had to make major changes in my cooking since my hubby discovered his blood pressure is sky high. So I’m learning how to cook without much salt. Goat cheese is a good option for cheese and this recipe sounds perfect. Thanks so much.

This was yummy! I think I might add some baking powder next time so they’re more fluffy and less solid.

This was great! I used twice as much goat cheese since it came in a 4 oz package and have no regrets. I also used the basil and garlic flavored goat cheese and half-and-half instead of cream. Yum!

These were delicious…I used feta cheese instead and sauted the garlic in the oil and then added the spinach to wilt.
