I first ate this dish at a Bed & Breakfast, and loved it so much, I came home and created my version!
Split the English muffins and toast each half.
Chop the whites of the hard cooked eggs and place in a small bowl; crumble the yolks and place in a separate small bowl.
Melt butter in saucepan over low heat. Add flour, blend together and cook for one minute. Add milk slowly, stirring constantly. Add salt and cook until thick and smooth, stirring constantly, about 5-8 minutes.
Add chopped egg whites to sauce and pour over toasted English muffins. Sprinkle some of the crumbled yolks over each serving.

Wow, I’ve never seen or knonw anyone else who has this recipe… We’ve had this for our traditional Christmas morning breakfast for over 40 years. My mom started serving it to us when we were kids and used to complain that we had to eat “Milk Toast” (that was my grandpa’s favorite and what my grandma used to make for him for Christmas breakfast) So then EGRod became “our” tradition.
Typically we use Sourdough Toast, but also use Buttermilk Biscuits… So comforting and yummee!! I hope others will try your recipe and become lovers of it as well.

My daughter’s boyfriend made this one night for us as a “breakfast for dinner” meal. He crumbled the bacon in the mixture and used biscuits instead of English muffins. I’m going to try it with the muffins next time.
Now my stomach is growling!

I made this for breakfast this morning, but used homemade bread. Quite tasty!

I make this too, only with bacon crumbled up into the mixture. Eggs in a white sauce over toast, muffins, or biscuits…very tasty indeed!
