Description

These are breakfast burritos without a lot of adornment. But the great thing about this recipe is, it’s basic. And you can use the basic method to create whatever degree of amped-up breakfast burrito you’re in the mood for.

Ingredients

  • 1 whole Recipe Of Ree's Basic Breakfast Potatoes
  • 1 pound Breakfast Sausage
  • 12 whole Eggs
  • Chopped Chives, to taste
  • Seasoned Salt And Pepper, to taste
  • 1 cup Monterey Jack Cheese
  • Flour Tortillas

Preparation

First have on hand one completed recipe of “Basic Breakfast Potatoes” (also available here at Tasty Kitchen). Then brown a pound of your favorite kind of breakfast sausage. Drain off the fat.

In a bowl, whisk together a dozen eggs (adjust according to your needs), chopped chives, seasoned salt, black pepper and about 1 cup of Monterrey Jack cheese. If you are feeling saucy add some cayenne pepper or Tabasco sauce for a little more of a kick.

Once your sausage is browned and drained add in the breakfast potatoes and stir to combine over low heat. Pour the egg/cheese mixture over the sausage/potato mixture. You don’t want to stir too much or the potatoes will fall apart and become mushy. Cook over low heat and turn them occasionally to cook.

When fully cooked throw some into a nice warm tortilla, wrap it up and, if they need to be kept warm for a bit, wrap them individually in sheets of foil.

my husbands favorite version of these is w/Chorizo…mine is w/bacon…
therefore i am constantly making them!!
such a great grab-and-go, filling meal!!

love the freezer idea. i keep a couple gallon zip-lock bags in the freezer. makes for a hardy, satisfying b-fast. Next time I might use frozen hash browns instead of basic breakfast potatoes.

Another recipe that freezes well – I too used frozen potatoes and they worked well.

I love these things, as does my husband. I’m lazy and just use the frozen potatoes(plus we’re not big on onions) and I fry them up in the sausage grease. Even my kids love these! And we don’t use the tortillas. We just put the whole thing in a bowl with some salsa and eat it.

I used frozen potatos (following the note that these might hold up better, not to mention make life easier) and spicy sausage. We enjoyed these on a lazy Friday off!
