Very quick, very easy and very good.
Preheat oven to 375 F.
Add all dry ingredients (flour through salt) into a bowl. Mix well. Add egg, oil, milk and vanilla. Stir by hand gently just until mixed together. Over stirring will result in tough muffins.
Mix-in ideas: (Don’t do all of these in the same batch, because the batter is about right for 1 1/2 cups of mix-ins. So pick only one):
1 1/2 cup chocolate chips
1 1/2 cup shredded carrot and 1/2 teaspoons cinnamon
1 1/2 cup chopped/peeled apple and 1/2 teaspoon cinnamon
1 1/2 cup blueberries
2 medium-sized ripe bananas, mashed
Spray two 12-count muffin tins with non-stick spray. Fill each muffin cup 1/2 way full of batter. Bake 18-20 minutes until done.

I baked these at 375 and it seemed to work out great. Also subbed half the oil with yogurt. Still moist and taste great. We did half carrot and half blueberry. Can’t decide which we like better

So good and so easy to make! My kids loved these… I added in the apples and cinnamon and then sprinkled the top with a sugar & cinnamon mix. Yum!
