YUM!! I made these for breakfast this morning with red bell peppers, mushrooms, and cheddar cheese and they were amazing! What a fun idea. My picky husband loved his too!

We thought these were fantastic! I think I have really big eggs because most of the whites ran down the side. (Oops.) Love all of the flavor combinations, though!

This was a great idea, and recipe. I made it for brunch on Easter and my family just loved it.

Because I was making this for one person, I adjusted the recipe a bit. I heated the rolls in the oven but then I filled it with freshly cooked bacon, an egg + cheese, spinach, salsa and some fresh parsley. Yummy! I look forward to making this again. It is also a nice portion control method.

Great idea – I use this concept for large football parties but fill those little bread baskets with various kinds of cooked chopped sausage (jalapeno/Beef is my favorite), sauteed onions, bell pepper, garlic, and cheese!

Oooooo, taking this recipe to my daughter’s house next month; we’re going to have some great fun with it! (And my son-in-law works for a specialty bakery–how perfect is *that*?!) One question, though: Would this work okay with a one-egg equivalent of Egg Beaters instead of the whole egg? Really strict low-cholesterol thing….

So glad everyone likes them! They are one of my favorites. Kay, you could definitely use egg beaters. I used just the egg white and it turned out great. Just be sure to watch the cooking time.
