Description

A cheaper and more natural granola bar that you can bake ahead and keep around as a snack or a quick breakfast.

Ingredients

  • 1-½ cup Oats
  • 1 whole Egg
  • 1 whole Egg White
  • 1 cup Packed Light Brown Sugar
  • 1 Tablespoon Canola Oil
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoons Salt
  • 1 teaspoon Vanilla Extract
  • ⅔ cups Dried Cranberries
  • 1 Tablespoon All-purpose Flour

Preparation

Preheat oven to 325 degrees F. Line an 8×11 pan with foil and grease with cooking spray.

Toast the oats on a baking sheet in a thin layer for 6-8 minutes.

In a large bowl, whisk together the egg, egg white, brown sugar, oil, cinnamon, salt, and vanilla extract. Add in toasted oats, dried cranberries, and flour.

Spread into the prepared pan evenly and all the way to the edges. Bake until golden brown (about 30 minutes). Then, remove and let cool.

Once it has cooled, cut into bars using a lightly oiled knife.

I even used the leftover crumbles as a granola cereal.

These were quick and easy to make. To make them a little healthier I used less sugar and instead of canola oil I uses coconut oil. Also I added some non flavored protein powder and wheat germ. Great for on the go!

These were soooo delicious and easy to make. The only problem I had was that the granola really stuck to the foil and sometimes crumbled when I attempted to take a piece. Any suggestions?

Fantastic ! My kids loved which says a ton in itself.
However, it didn’t make 20 servings for me. More like 8-10 because we like granola bar size portions .
Will definitly make again.
