Description

With toasted oats, shredded coconut and chai spices, this homemade granola is full of autumn flavors for your yogurt bowl! Vegan and gluten-free friendly.

Ingredients

  • ¼ cups Coconut Or Canola Oil (or Melted Butter)
  • ¼ cups Honey Or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Oats (gluten Free Optional)
  • ½ cups Shredded Coconut
  • 1 pinch Salt
  • ½ teaspoons Ground Cinnamon
  • ½ teaspoons Ground Ginger
  • 1 pinch Ground Nutmeg
  • 1 pinch Ground Cloves
  • 1 pinch Ground Cardamom

Preparation

Preheat the oven to 325°F and line a large rimmed baking sheet with parchment paper.

In a medium-size bowl, whisk together the oil (or melted butter, if using), honey and vanilla. Add in the oats, shredded coconut, salt and spices, and stir until all of the oats and shredded coconut are covered in the oil-honey mixture.

Pour the granola onto the lined baking sheet, and use a spatula to spread out the granola making sure it is in one layer.

Bake at 325°F until golden brown, about 20 minutes, stirring the granola after 10 minutes. Remove pan from oven and set it on a rack. Let the granola cool completely.

To serve, eat as is or mix with yogurt, milk, or ice cream. Enjoy!

Note: Store the granola in a glass jar at room temperature.
