Description

If you think you are not a cottage cheese fan, you will be after this. Ridiculously easy yet amazingly delicious, this recipe just feels like home.

Ingredients

  • 1 pound Bacon, Chopped
  • 1 whole Onion, Diced
  • 4 cups Shredded Hash Browns
  • 9 whole Eggs, Beaten
  • 2 cups Cheddar Cheese, Shredded
  • 1-½ cup Cottage Cheese
  • 1-¼ cup Swiss Cheese, Shredded
  • ¼ teaspoons Salt
  • ½ teaspoons Pepper

Preparation

Preheat oven to 350ºF.

In large skillet over medium high heat, cook bacon and onion together until bacon is evenly browned. Remove from pan and place in a large bowl.

To the bowl, add hash browns, beaten eggs, cheddar, cottage cheese, Swiss cheese, salt and pepper. Stir all ingredients together and pour into lightly greased 9×13 pan.

Bake for 45 minutes, then remove and let cool 10 minutes before serving.

I have made this several times using 1 pound of sausage in place of the bacon. It’s a favorite at my house.

I made this with sausage and an addition of mild Rotel for 11 of my friends at a women’s retreat. Overwhelming approval! So yummy! I adjusted the recipe for 12 servings and added 2 cans of well-drained mild Rotel.
