Description

Love these quick bread cinnamon rolls and the added cardamom gives me my Swedish fix. Tastes awesome with a hot cup of coffee.

Ingredients

  • 2 cups Sifted All-Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • ¼ teaspoons Baking Soda
  • ¼ cups Vegetable Oil
  • ¾ cups Buttermilk
  • 8 Tablespoons Butter, Softened
  • ¾ cups Granulated Sugar
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Ground Cardamom
  • 1 cup Milk (optional)

Preparation

1. Combine flour, baking powder, salt and baking soda in a medium bowl and mix well. Stir in vegetable oil. Add buttermilk and stir just until blended.
2. Knead the dough on a floured surface until smooth. Roll dough into a 15×8 inch rectangle.
3. Preheat oven to 400 ºF. Grease a 9″ round baking pan.
4. Spread butter over the dough. Combine granulated sugar, cinnamon and cardamom in a small bowl and mix well. Roll up the rectangle, jelly roll fashion, starting from one long side. Pinch seam to seal.
5. Cut the roll into 1 1/2 inch slices. Arrange slices, cut side up, in the prepared baking pan. Bake until lightly browned, about 15–20 minutes. Remove from the oven. Pour milk over the top, if desired. Serve hot with a good cup of coffee and TRY not to eat the entire pan.

I made these for breakfast today and they are so, so yummy! I subbed half white whole wheat flour and half AP flour, also increased the cardamom to 1/2 tsp and decreased the cinnamon to 3/4 tsp. I loved how quickly they came together, and how tasty they are. My only issue was that the spiced sugar mixture fell out of the rolls during transfer from the counter to the pan. Next time I make them, I plan on mixing the butter with the spiced sugar to make a paste, then spread that on the dough.
