Description

Tart Granny Smith apple combined with the smooth warmth of pumpkin, all topped with a sugary pumpkin crust. This is one heavenly muffin.

Ingredients

  • 1-⅔ cup All-purpose Flour
  • 1 cup Sugar
  • 1 Tablespoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • ¼ teaspoons Baking Powder
  • 1 cup Pureed Pumpkin
  • ½ cups Butter, Melted
  • 2 whole Large Eggs, Lightly Beaten
  • 1 whole Granny Smith Apple, Peeled, Cored, And Finely Chopped
  • * * * * * *
  • FOR PUMPKIN SUGAR CRUST:
  • 3 Tablespoons Sugar
  • 1 teaspoon Pumpkin Pie Spice* (See Tip Below To Make Your Own Spice Blend)

Preparation

Combine first 6 ingredients in a large bowl. Make a well in the center of the mixture. Combine pumpkin, butter, and eggs in another bowl and add to the dry ingredients, stirring just until moistened. Fold in chopped apple and spoon into greased muffin pans, filling two-thirds full.

Combine 3 tablespoons sugar and 1 teaspoon pumpkin pie spice; sprinkle evenly over muffins. Bake at 350 degrees for 20 minutes. Remove from pans immediately, and cool on wire racks.

*My tip: if you don’t have pumpkin pie spice, use the following combination:

1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon cloves

Mix together and voila! You have the equivalent of 1 teaspoon pumpkin pie spice.

These were a hit! After the first batch, I started substituting and adding ingredients to up the nutrition level. I added extra apple, substituted apple sauce for the butter, threw in some oatmeal, and left off the extra sugar topping. My toddler LOVED them, and so did rest of the crew (and I didn’t feel as bad eating more than a few myself).

These are wonderful. I loved the pumpkin pie spice tip as I live in a land where the pre-mixed anything is not really around much. I love how moist these are and they are indeed absolutely perfect for Fall. They yielded the 2 dozen for me. I put a tablespoon in each muffin case (I didn’t butter but used the paper cases) and then topped up any that looked a bit undersized.

My daughter is eating one of these right now.. she gives it 5 mitts! These are so yummy, and really easy to make. I love that you added directions for making your own PPS. So much more economical (and you can use fresher spices) than buying a jar of it and keeping it in the cupboard for years. These are very moist, and the sugar crust is yummmm. I love your blog, Melanie.. I’ve already made 5 recipes of yours, and they’re all great! Thanks so much!

Very delicious, my husband loved them! Great texture and density. I sometimes find pumpkin baked goods too wet and heavy. These were just right!

From the mouths of my 3-year old twins, “Mama, these muffins are so yummy!” I made a few changes to suit my tastes: I substituted 2/3 cup of the all purpose four with whole wheat flour, I cut the sugar down to 2/3 cup, and I added 1/2 unsweetened apple sauce to the batter (I also found the batter a bit dry, so the applesauce did the trick!) My batch ended up making 20 muffins that I baked for 18 min. Delicious, thank you!

These were WONDERFUL! Super moist and delicious. I made them as mini muffins and baked them for 15 minutes…YUMMY!
