Description

This banana bread cake is unique for its texture. Delicious and sweet, but very different as it is not dense like most banana breads.

Very good when you have to serve a lot of people, I made it for our church morning brunch meetings!

Ingredients

  • 1-½ cup Mashed Banana
  • 1 cup Sour Cream
  • ½ sticks Butter, Softened
  • ¾ cups Brown Sugar
  • ¼ cups White Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ cups Nuts Or Chocolate Chips (OPTIONAL)

Preparation

1. Preheat oven to 350 degrees F and grease one 9×13 inch pan.
2. Combine mashed up banana and sour cream in a bowl, set aside.
3. In a large bowl, cream together butter and sugars until smooth.
4. Beat in eggs, then stir in vanilla and the banana mixture. Set aside.
5. Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Slowly blend this into the banana mixture. Fold in the nuts or chips, if desired.
6. Spread the batter evenly into prepared pan.
7. Bake for about 45 minutes, or until a toothpick comes out clean.
8. After cooling for 30 minutes, wrap up the bread in foil to trap in the moisture!

TIP: As mentioned, this is a cake-like banana bread recipe. It is not dense/overly moist!

Serve warm with butter on top!
