This is a 25-minute meal. And it is healthy and delicious. And my kids love it. Need I say more?
In a large stock pot, heat olive oil over medium-high heat. Add onions and saute for until translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
Add tomatoes and broth. Turn heat up to high and bring to a boil. Add the tortellini and cook according to package instructions. When tortellini has about a minute left to cook, add the spinach. Once spinach is added, salt and pepper to taste.
Garnish with Parmesan cheese. Serve immediately.
Serves 8.

We have a local “fast-food” (it’s really not your average fast food, lots of fresh ingredients and great variety) restaurant called BeefaRoo and they have a soup very similar to this and I absolutely love it! Can’t wait to try this out, thanks!

This is my absolute favorite soup. It is a hit every time I make it. I use stewed tomatoes in mine and I cut the chicken broth in half and use water and tomato boullion (sp?) cubes. I love it that other people know this soup too.

Oh my was this delicious. I wasn’t so sure it would be sooo good as it was sooo simple! A real keeper, thank you so much. My only change was I used frozen, chopped spinach instead of fresh. The family just loved it 8D

I make something very similar but mine has crumbled italian turkey sausage in it. So yummy!
