Description

This is my favorite Thai soup. I love the coconut broth and all the lovely things in it. It is really quick to make if you have all the ingredients on hand. It warms my soul!

Ingredients

  • 2 whole Chicken Breast, Cut In Chunks
  • 1 whole Onion, Chopped
  • 6 cups Water
  • 1 cup Chopped Shiitake Mushrooms (regular Mushrooms Work, Too)
  • 14 ounces, fluid Canned Coconut Milk
  • 1 Tablespoon Red, Yellow, Or Green Curry Paste
  • 2 Tablespoons Fish Sauce Or Soy Sauce
  • ¼ cups Sugar
  • 1 piece Lime Wedges
  • ½ teaspoons Red Chili Flakes
  • 2 whole Tomatoes, Cut In Wedges
  • ¼ cups Fresh Basil, Chopped

Preparation

In a large sauce pan, cook the chicken in a little bit of oil until done, about 5 to 7 minutes. Add the onion and cook until translucent. Add the remaining ingredients except for the tomatoes and basil. Bring to a boil and then let simmer for 10 minutes.

Add the tomatoes and basil and cook until warmed through. Taste and adjust seasoning. I like mine a bit sweeter, so I add about 1/4 cup more of sugar. If it needs more salt, add a little more fish sauce. This is a strong ingredient so be gentle with it. If you like it a bit more spicy, add a little more red chili flakes.

This is a real different soup, but dang it, it is good!

I made this yesterday for lunch. So yummy! I made mine vegan, though. No chicken, just more veggies. Also, I used about 1 1/2 times of red curry paste that the recipe called for.

This is a great soup. Because other users thought the amount of water was a bit much, I started with 1 cup and I liked it that way. I used roasted red peppers instead of tomatoes since I didn’t have any on hand, and as suggested, added brown rice. I had to eat two big helpings!!!

Yum! I bumped up the vegetables by adding red peppers, snow peas and a few potatoes (must get those five servings in a day!), I also used chicken stock instead of water, it was very good. thank you for sharing.

Yummy! I’ve tried making coconut soup before with limited success. This was different from our local restaurant, but very delicious and probably a lot healthier! My family gives it a big thumbs up! We served it with PWs Sesame Noodles and decided it was the best dinner we had had in awhile!

I made this last night and it was great. I used 28oz coconut milk and 4 cups chicken broth instead of water. Also, I used shrimp in place of chicken and put in a head of broccoli. It was great. Thank you so much we will be having this as are new favorite soup!!

I really liked this soup. I made a few substitutions after reading the reviews…chicken broth instead of water, cherry tomatoes and cilantro. I also used Penzey’s sweet curry powder instead of paste and it was delicious! Great recipe Lisa, thanks for sharing!

I had never made soup before, but after this recipe was featured a year or so ago, I decided to give it a try. It turned out tasting even better than the Tom Ka Kai I get at our favorite local Thai restaurant! Since then I’ve made this recipe many times, and it always turns out amazing. My husband loves it so much he claims that I’ve spoiled him for restaurant soups :)

I’ve had 2 bowls and may be going for a 3rd. Yum! I dredged my chicken in seasoned cornstarch before browning it – gives the soup a little more body. Also used chicken stock instead of water and added savoy cabbage.

The flavor is very good, but the broth is way too watery. Next time I will cut the water down to 3-4 cups and possibly add rice noodles.

Loved this soup! ate it with brown rice at the bottom of the bowl. Also read the reviews and went light on the water. I diced my tomatoes really fine because husband doesn’t like them. he didn’t notice at all. Next time i might add a tad more coconut milk. I also used left over rotisserie chicken. Made this soup in a minute. So easy!
