A super healthy soup with a Mexican kick full of ground beef or turkey, black beans and corn. Perfect for a cold winter day!
Chop onion pretty finely. In a large pot, cook meat and onions until meat is fully cooked and onions are soft but not browned. Use medium heat and stir often. Add in the remaining soup ingredients. Stir and bring to a simmer. Let simmer for 20 minutes.
Ladle into bowls and top with garnishes of choice!
