absolutely awesome soup! It was soooooo good. My husband even loved it and he is so plan with food. It was the perfect blend of spices and taste! Loved it!

Yummy, yummy, yummy! This soup is so forgiving, too. I used a can of Rotel because I didn’t have a can of diced green chiles on hand. Paired with cheese quesadillas it was a satisfying weeknight dinner.

Hooray! Had to give it five mitts up! Added carrots and a whole jalapeno minced tiny tiny tiny…almost into mush…with a little salt…seeds,veins and all. This way the heat isn’t overpowering and distributes nicely. Squeezed a lemon wedge over
each bowl before serving. I also added a chopped…just one…chopped Idaho potato with the skin on…cubed…read somewhere once that you should always add just one cubed potato to a soup cuz the potato soaks up the soul of the broth. It’s true! Added some chili powder, cuz, ya know, we’re in Texas. This is a fantastic soup. I made it once exactly as the recipe stated and it was amazing. It’s the enchilada sauce that is the secret. Brilliant. So add to it, or keep it as is. It’s FANTASTIC.

Just like Kellydelp, I added carrots and a whole jalapeno minced tiny tiny tiny…seeds, veins and all.
Oh this is so good! Also used a little butter with the olive oil when simmering the onions, carrots, jalapeno and green chiles.

In Texas, tortilla soup recipes are part religious artifact part and sealed DNA records. You don’t just walk around saying you have the best tortilla soup recipe. Somebody will squirt lime juice in your eye. But this, this is it. It’s the enchilada sauce. Brilliant. I do add chili powder…about a tablespoon or more….and I squeeze a lemon slice over the top before serving each bowl. It brightens the flavor. Very impressed with this recipe. Have made it time and time again and my husband who owns as advanced palate in all things Tex-Mex, LOVES this! Great job. Bueno!

I have been wanting to make this since I first laid eyes on it. I finally did tonight! This soup is super easy to make and it tastes and looks like you spent way more time on it than you did It’s also DELICIOUS!!! I suggest this soup wholeheartedly. I am a bit snobby when it comes to Mexican dishes-I tend to snub my nose at anything not “authentic”. I love this. It holds up and is tasty.
