Description

Pistachios and dried cranberries are combined with creamy white chocolate for a super festive chocolate bark recipe. Great on a cookie tray or to give as gifts!

Ingredients

  • 1 pound White Chocolate
  • ½ cups Shelled Pistachios
  • ½ cups Dried Cranberries

Preparation

1. Line a baking sheet with parchment paper and set aside.

2. Melt the white chocolate over a double boiler (or in 30-second intervals in the microwave on 50% power, stirring after each). Once the chocolate is melted, remove from the heat and let sit for a few minutes to cool slightly, stirring occasionally. Add the pistachios and cranberries and stir to combine.

3. Spread the chocolate mixture onto the prepared pan in an even layer (depending on the size of the pan and how thick you’d like your bark, you may not need the entire surface of the pan).

4. Refrigerate for at least 30 minutes, or until set.

5. Using a sharp knife, cut the bark into pieces. Store in an airtight container in the refrigerator.

I make this with melted bittersweet chocolate, cranberries, chopped pistachios, and chopped dried apricots. YUM!!!

I made this bark last Christmas season and will definitely be making it again this year. It’s so festive and simple to prepare, not to mention incredibly delicious.

I’ve made three batches of this in the last week — it is beautiful and very tasty. After following the recipe exactly and spreading the melted mixture, I made these two additions:
– sprinkled extra nuts and berries onto the top so some are visible (maybe 2 Tablespoons of each)
– drizzled melted dark chocolate over everything to make it extra-pretty

How ironic that I made these today from BEB’s blog, and they get featured on the TK site. This was incredibly easy to make. The colors are especially perfect for Christmas gifts, and they taste awesome. The tart of the cranberries, the rich, toasty pistachios and the creamy white chocolate make a perect combination. Don’t wait. Make it now! When it’s this easy, there’s just no excuse not to.
