Description

A perfect blend of not-too-sweet, chewy, nutty, chocolate and cherries. Enjoy!

Ingredients

  • 1 cup Butter, Softened, Divided
  • 1 cup Firmly Packed Brown Sugar
  • 2 whole Eggs
  • 1-½ teaspoon Vanilla Extract
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Cinnamon
  • ½ teaspoons Salt
  • 3 cups Old Fashioned Oats
  • 1 cup Dried Cherries, Chopped
  • 8 ounces, weight Semi-sweet Chocolate, Chopped
  • Coarse Salt, For Sprinkling (optional)

Preparation

In a medium saucepan, melt 1/2 cup butter over medium heat. Once the butter is melted, swirl the pan for 3 minutes, until the butter is golden brown and has a nutty smell. Set aside to cool.

In a large bowl, combine the remaining 1/2 cup butter, sugar, eggs, and vanilla. Mix until well blended. When the browned butter is cool, add it to this mixture. Let the mixture sit for about 5 minutes before proceeding to the next step (this lets the sugar dissolve a bit in the butter).

Using a spatula, gradually mix in the flour, baking soda, cinnamon, and salt, until just combined. Stir in the oats, cherries and chocolate.

Scoop out 2-tablespoon portions for each cookie and place on a nonstick baking pan. Sprinkle ever-so-slightly with coarse salt (if desired). Bake for 10 to 12 minutes at 350 degrees. Let the cookies cool for a minute or two on the baking pan, and then move to a cooling rack.

These are now my favorite cookie–I also put a bit more cherries in. And if I don’t have any cherries, I just make this as a normal chocolate chip cookie, they are that great.

I made these on Super Bowl Sunday and although they didn’t help the Colts win, they were still terrific. My sister, who hates fruit, even liked them! The cherries just add a nice tang to the cookie (I didn’t bother chopping them because I like the bigger chunks), and the hint of cinnamon is wonderful. Thanks for sharing!

Delicious! These looked somewhat healthy, so I made them for an afternoon snack. Yum, and now I don’t want dinner. I used a cup of chocolate chips rather than chopping my own, and next time I may add more cherries. There is just a hint of flavor, and I’d rather more of a bite.
