Description

Remember those yummy Danish butter cookies you would eat in school as a child? These are the homemade version, and they are just as delicious. The best part is, you only need six basic ingredients to relive this childhood favorite!

Ingredients

  • ½ cups Unsalted Butter, Room Temperature
  • ½ cups Sugar
  • 1 teaspoon Vanilla Extract
  • 1 whole Egg White
  • 1-½ cup Flour, Plus 2 Tablespoons
  • Coarse Sanding Sugar, For Decoration (optional)

Preparation

1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper, and set aside.

2. On medium speed, cream together the butter and sugar with an electric mixer.

3. Mix in the vanilla and the egg white.

4. On low, add the flour, and mix until combined.

5. Roll the dough into quarter-size balls. Place each ball on the lined baking sheet, about 1 inch apart. Using the palm of your hand, gently press down on each ball. If using, sprinkle each cookie with the coarse sanding sugar.

6. Bake, rotating pans halfway through, about 13-15 minutes, or until the cookies begin to turn golden in color. Cool completely on a cooling rack, and enjoy!

These were great! Instead of rolling them into balls I did them 2 different ways to see what I liked.. First I rolled the dough into a log and stuck it in the freezer for a few min and then sliced the dough into ½ inch circles. Next I rolled the dough a ½ inch thick between 2 layers of wax paper and used cookie cutters. Both methods worked really well. Just make sure to keep an eye on the cookies in case they are rolled a bit too thin as they will burn :)

Overall, these were delish! Buttery and not too sweet.
