Description

Melt in your mouth cookies! These are super easy and only require 6 ingredients (ones that are typically in your pantry, not including the water). No eggs are needed! Simple and delicious!

Ingredients

  • 1 cup Butter
  • ⅔ cups Granulated Sugar
  • 2 cups Flour
  • ½ teaspoons Almond Extract Or Vanilla Extract
  • 1 jar Raspberry Jam (12 Ounce Jar, Use As Much As You Need)
  • 1 cup Powdered Sugar
  • 1 Tablespoon Water

Preparation

Cream together the butter with the granulated sugar. Mix in flour and extract. Scoop out a spoonful of the mixture and shape into 1-inch balls. (The mixture will just barely come together.) Put each ball onto a cookie sheet and press your thumb into each one to make an indention. Put as much jam as you can put into each thumbprint.

Bake 14-18 minutes at 350 degrees.

Once cookies are cooled, mix together the powdered sugar with the water and drizzle onto the cookies.

Makes about 24 cookies.

is 1 Tbsp of water really enough to mix with 1 CUP of powdered sugar? Doesn’t seem like it would be enough. Just making sure before I make these.

Made these tonight. Sorry but I had to add an egg because the dough was so powdery it fell apart. Once I added the missing ingredient I have to say these were the best cookies I’ve ever made! They will definitely continue to be a favorite in my family :)

I made a version of these cookies the other day and loved them. Thank you so much for posting! I added a couple of egg yolks to the batter so they were less of a shortbread cookie, but will try them your way next time to compare. Delish!

Very easy recipe, although I guess I need better description on balling them because mine came out flat and the first batch too brown with the suggested time/temp. :-(

I made these for Christmas. Everyone loved them! The cookie itself tastes more like a biscuit which was unexpected but good. I felt like I needed some hot tea haha. Very easy just don’t overload on the jam or else it will spill over.
