Description

Chocolate Pancakes? Yes, you can have chocolate for breakfast. These don’t need syrup and eat more like a crepe than a pancake.

Ingredients

  • 1-⅔ cup Flour
  • ⅓ cups Unsweetened Cocoa Powder
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 4 Tablespoons Sugar
  • 1 cup White Chocolate Chips
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 1 Tablespoon Corn Syrup
  • ⅓ cups Butter, Melted
  • 1-¼ cup Whole Milk

Preparation

Combine flour, cocoa, baking powder, salt, and sugar in a large mixing bowl. Add in the white chocolate chips.

Beat the eggs and vanilla together and stir in the corn syrup, milk, and butter until blended.

Pour liquid ingredients over the dry ingredients, stirring thoroughly. When it looks like a milk shake, you’re good to go.

Drop batter in 1/4 cupfuls onto a hot buttered griddle. Make sure you have plenty of bubbles before you flip these, since the batter is dark and tougher to judge when it is getting fully cooked.

@sdodds92: The milk does not have to be whole milk. Whatever you got in the fridge will work, I just go rich when I can. I have made these with skim and it works fine.

this sounds like a great recipe but I have a question… for the 1 and 1/4 cups milk, does it need to be whole? or will 1%, 2%, or skim work?

I made these for breakfast over the weekend. They tasted great, so rich and chocolaty (and so fluffy!). I tried some with dark chocolate chips and they were even better! I will be making them often.

I plan to make them for a dessert sometime and top them with whipped cream and strawberries.
