These pancakes are my go-to recipe. They are just as quick and easy as using a pancake mix but much tastier!
In a large bowl, mix together all dry ingredients until combined. In a measuring cup measure the milk and add the egg and oil and mix well. Pour wet ingredients into the dry ingredients and mix until just combined (you want some lumps).
Pour the completed batter back into the measuring cup and pour 1/8 of the batter directly into a greased pan heated to medium.
Let pancake cook until many bubbles appear on the top and the sides appear dull. Flip over and wait for the pancake to puff up before transferring to a platter. Continue until all the batter is used.

I added a bit more milk as my husband like thinner pancakes ( i like thicker, but I aim to please)
will for sure keep this one for quick “i don’t have any buttermilk days” Thanks for sharing.

Easier than my standard Joy of Cooking recipe. Thanks! Yummy with blueberries. I made a double batch and froze them so I could enjoy them for the rest of the week.
