Description

Easy and elegant breakfast or brunch dish all in one pan! Ham, spinach, cheese and eggs. Couldn’t be simpler.

Ingredients

  • 12 slices Deli Ham
  • 1 box (10 Oz. Box) Frozen Spinach, Thawed
  • 2 cups Shredded Cheddar Cheese
  • 12 whole Eggs
  • 2 pinches Salt And Pepper, For Seasoning

Preparation

Preheat oven to 350 degrees.
Spray muffin tins with cooking spray.
Press a slice of ham into each muffin cup.
Place some spinach into each cup on top of the ham.
Add in some cheese to each cup on top of the spinach.
Crack an egg on top of each cup and season with salt and pepper.
Bake for 25 minutes or until done!

I wouldn’t use fresh spinach unless you were going to cook it down first and squeeze all the water out. You don’t want all that water cooking out of the spinach and making everything really runny inside the egg cup.

Interesting! If you’re going to use large eggs, make sure the muffin cups are on the large side. I used regular muffin tins and all the fillings overflowed. Still tasty though! And super easy.

Delicious! Great idea and perfect weekend breakfast. I also used ramekins and baked them in the toaster oven.

We love these! I use fresh spinach (just chop it up and put it in before the cheese) and scramble the eggs because my husband is anti-runny yolk. My husband has taken them to work for brunch potlucks 2X and they are always a hit. Thanks!

I have made these several times and my whole family loves them! I made them for Christmas brunch with my in-laws this year and they were a hit. I like to cook them a minute or two less than recommended because I like the yolks a little softer.

These were very good, but the egg yolks came out a bit hard, like hard-boiled eggs (which I don’t particularly enjoy). Next time, I think I will scramble the eggs prior to pouring over the ham. Otherwise, this was a great addition to hash browns and turkey bacon!

Yum!

Easy, fast, and tasty! I used Colby Jack instead of Cheddar because I had it handy, and just squeezed out some canned spinach really well because I have a weird issue with the frozen stuff. I had some whole grain toast with a little strawberry preserves and two of these for dinner when I wanted something different from the normal rotation. I will definitely be using this recipe again!
