Description

These really are like little apple pie muffins from heaven. I love apple pie and I thought these would pale in comparison, but they are a nice substitute when you want something different! Delicious, and it’s going in my regular rotation of baked goods!

Ingredients

  • FOR THE CRUMB TOPPING:
  • ½ cups Packed Brown Sugar
  • 1 cup All-purpose Flour
  • ¼ cups Melted Unsalted Butter
  • 1 teaspoon Cinnamon
  • For Muffins
  • 1-½ cup Packed Brown Sugar
  • ⅔ cups Vegetable Oil
  • 1 whole Egg
  • 1-½ teaspoon Vanilla
  • 1 cup Buttermilk
  • 2-½ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 2 cups Diced Peeled Apples

Preparation

Topping:

In a small bowl, toss together crumb topping ingredients until crumbly. You may need more flour to get a good crumble. Set aside.

Muffins:

In a large bowl, whisk together the brown sugar and wet ingredients (brown sugar, oil, egg, vanilla, buttermilk) until smooth.

In a separate bowl, sift together flour, soda and salt. (I don’t have a sifter, so i just fluff/mix it up with a fork.)

Stir oil mixture and flour mixture together.

Fold in apples, mixing just until combined. Batter will be a bit runny, but that’s okay.

Spoon into greased muffin cups, filling 3/4 full. (The easiest way is to use a 1/4 cup measuring cup.)

Sprinkle topping over evenly. (It’s easiest to use your fingers.)

Bake at 350°F for 25 to 30 minutes or until golden brown and the tops spring back. I baked mine for 28 minutes, and it was perfect!

Ohh… forgot to add that Ichose to grate the apples. I prefere that texture to the chunks. ;-)

These are by far the best apple muffins! I’ve made them for friends, family and morning staff meetings, they are a hit with everyone! I used half whole wheat flour (I add it to all my baking-love the texture and flavor). Oh, I’ve ran out of oil, & used sour cream to make up the diff. whoa…so very good! Thanks for sharing your recipe!

3 out of 4 of the family LOVED these. The fourth didn’t like the pieces of apple.

When I make them again, I’m going to add some cinnamon and nutmeg to the batter – more apple pie-like.

These are seriously the best muffins I have ever made! They were soooo good and I didn’t even make the topping for them. I can’t even imagine how great they’ll be when I make them again and add the topping :) Thanks for the recipe!

LOVE this recipe! they taste like drakes coffee cakes! woohoo drakes! i added a bit more apples, and the topping calls for cinnamon but i also added a lil cinnamon to batter…made with whole milk with vinegar(to make buttermilk) and i think once with soymilk..hmm foggy memory. make these – they will make you smile!

Just made these today and the recipe was just what I was looking for – something I already had ingredients on hand for. I followed some of the tips in the comments and added 1 tsp cinnamon and 1/2 tsp nutmeg to the batter. I also made buttermilk with 1% milk and vinegar, and subbed applesauce for the oil. I, too, had plenty of leftover crumble mixture. By the way, a tip for that – instead of making as directed and adding flour if needed, mix all the dry ingredients and then add the melted butter a bit at a time. I got a perfectly textured topping that way, although found the flavor to be a bit floury. I used honeycrisp apples for this and only needed 1 1/2 apples to make 2 cups. Hubby says he expected something a bit “juicier” judging by the name, but the flavor is pretty good and they make the house smell amazing as they’re cooking. Thanks! :)

I just made these this morning and they are so tasty! Definitely not a “health food” muffin, but a wonderful way to use the big bag of apples I just got from a friend!
I did standard size muffins as well as mini muffins to pack for my daughter’s lunches.
I had no problem with the crumble sticking, but did find that I had a LOT of it. Next time around I will make less crumb topping a the muffins are already sweet enough.

I made these last night and brought them to the office for a co-workers birthday. She loved them. I love them. Like MeredithCanCook, I also made my buttermilk from regular milk (fat free!) and vinegar. I would like to add that 2 cups of apples are about 2.5 medium apples, maybe 3 small ones? I think this recipe would do well with being converted to whole grain with whole spelt flour or even whole wheat. I will have to try that next time. Thanks for a great recipe!
