Light and healthy frittata with butternut squash and caramelized onion.
Preheat oven to 350ºF. Prepare a 10-inch skillet with nonstick spray.
Caramelize the onion in the skillet over medium-high heat, about 5 minutes. Add roasted squash for another 2 minutes to warm.
In a mixing bowl, combine eggs, egg whites, milk, Parmesan, smoked paprika, garlic powder, salt and pepper. Whisk until combined.
Pour egg mixture over squash and onion. Be sure squash and onion are covered so they don’t burn.
Cook over medium heat for 3 minutes or until edges begin to set. Place skillet in oven, cook for 15 minutes.
