Description

This is a super easy recipe for a healthy banana bread that is also nut-free and egg-free. Not only does this use up those ripe bananas on the counter, but it also uses whole wheat flour and it has protein in it from cottage cheese, which is not as weird as you’d think. It doesn’t rise very much, but still stays light and moist. Makes a great breakfast bread or for a snack.

Ingredients

  • 2 whole Ripe Bananas
  • ½ cups Low Fat Cottage Cheese
  • ½ cups Whole Wheat Flour
  • ½ cups All-purpose Flour
  • ¼ cups Brown Sugar
  • ¼ cups White Sugar
  • ½ teaspoons Vanilla Extract
  • 1 teaspoon Baking Powder
  • ¼ cups Canola Oil

Preparation

Preheat oven to 325 degrees.

In a large bowl, mash peeled bananas. Add cottage cheese and continue mashing.

Add remaining ingredients and mix together until well combined.

Pour batter into a greased loaf pan, spreading evenly.

Bake for 32-35 minutes. Let cool before removing from the pan and serving.

Thanks so much, Amanda, for a great recipe!! It is everything you said and more!! I am allergic to nuts so this recipe is particularly welcomed. I also liked the fact that it didn’t have as much sugar (as the recipe I currently use) and used whole wheat flour.
