Description

Need some luck achieving your New Year’s resolution to eat better? This delicious and healthy recipe will help.

Ingredients

  • 3 Tablespoons Olive Oil
  • 1 whole Onion, Thinly Sliced
  • 1 whole Carrot, Chopped
  • ½ cups Green Onion, Sliced
  • 3 cloves Garlic, Chopped
  • 1 teaspoon Smoked Paprika
  • 1 Tablespoon Hungarian Paprika
  • ¼ teaspoons Celery Salt
  • 1 Tablespoon Oregano
  • 1 teaspoon Red Pepper Flakes
  • 2 bunches Collard Greens, Ribs Removed And Cut Into Strips
  • 2 cups Reduced Sodium Chicken Broth
  • 2 cups Water
  • 2 cans (15 Oz. Can) Black-Eyed Peas, Reduced Sodium If Possible (Do Not Drain Or Rinse)
  • 2 teaspoons Tapatio Or Other Hot Sauce (optional)
  • Salt To Taste
  • 4 cups Rice, Cooked (To Serve)

Preparation

Heat oil in a large, heavy pot over medium-high heat. Add onion and cook until softened, 5 minutes. Add carrot, green onion and garlic and cook for a few minutes more. Add seasonings and spices and cook until fragrant.

Next add collard greens in batches and allow to wilt down. Pour in broth, water and beans and hot sauce. Bring to a boil and then lower the heat and simmer for 15-20 minutes.

Taste and add salt if necessary. I was unable to find low sodium beans so I did not have to add salt. The smoked paprika is the key ingredient, I think.

Serve over some rice and enjoy!
