  • 2 Tablespoons Coconut Oil, Melted
  • 1 cup Dates, Pitted
  • FILLING INGREDIENTS:
  • 2 pints Strawberries (rinsed, Stemmed And Sliced)
  • ¼ cups Water
  • 1 Tablespoon Arrowroot
  • 1 Tablespoon Lemon Juice

Preparation

Note the assembled pie requires a minimum 3 hours of refrigeration.

For the crust:
1. Preheat oven to 375 F.
2. Place the pecans and almonds into a food processor and blend into a fine flour.
3. Add the melted coconut oil and dates and blend again until a sticky dough is formed.
4. Remove the crust from the processor and place into a greased 9-inch pie dish.

For the filling:
1. Place the strawberries and water into a pot. Bring to a boil, then add the arrowroot.
2. Turn mixture down to low and add lemon juice.
