Roasted sweet potato with steamed broccoli and Swiss cheese. Gluten-free and vegetarian-friendly.
1. Preheat oven to 425 degrees F.
2. Wash sweet potato(es), pat dry, and wrap in foil.
3. Place the potato(es) in the preheated oven and roast for 45-60 minutes or until soft and thoroughly cooked.
3. Unwrap the sweet potato. Top sweet potato with steamed chopped broccoli and Swiss cheese. Then heat it in the microwave or under a broiler for just a few seconds, until cheese is melted. Add salt and pepper to taste, optional.
