Description

Roasted sweet potato with steamed broccoli and Swiss cheese. Gluten-free and vegetarian-friendly.

Ingredients

  • 1 whole Sweet Potato
  • 1 cup Chopped Broccoli, Steamed
  • 1 ounce, weight Swiss Cheese
  • Salt And Pepper, to taste

Preparation

1. Preheat oven to 425 degrees F.
2. Wash sweet potato(es), pat dry, and wrap in foil.
3. Place the potato(es) in the preheated oven and roast for 45-60 minutes or until soft and thoroughly cooked.
3. Unwrap the sweet potato. Top sweet potato with steamed chopped broccoli and Swiss cheese. Then heat it in the microwave or under a broiler for just a few seconds, until cheese is melted. Add salt and pepper to taste, optional.

Simple, clever, and delicious. I made these for our low-key Thanksgiving dinner as an entree for myself who has always been vegetarian and recently went gluten-free. The only trouble with this isn’t with the recipe, it’s that sweet potatoes are so dang big! Might be worth trying to dice them up into smaller serving portions, I was the only guest who finished mine.
