Fabulous gluten-free cookies that are rich, chewy, chocolatey and craving-worthy!
Preheat oven to 350ºF and line a baking sheet with parchment paper or a Silpat. In a bowl, stir together the almond meal, cocoa powder, sugar and salt to combine. Stir in the egg whites and vanilla extract; it will take a little elbow grease, but eventually it will form a thick dough.
Drop the dough by the tablespoon onto the prepared baking sheet. Bake at 350ºF for 15 minutes. Let cool completely before removing from the pan (otherwise they’ll stick!).
