Paleo Strawberry Cupcakes are nut-free and made with only 7 ingredients. The perfect healthy dessert for Valentine’s day, Easter and Passover.
Preheat oven to 350°F.
In a food processor, pulse together coconut flour, salt, and baking soda. Pulse in eggs, honey, and vanilla until thoroughly combined. Remove blade from food processor and stir in strawberries by hand.
Line 9 cups in a standard size muffin pan with paper liners and scoop ¼ cup batter into each.
Bake at 350°F for 24-26 minutes. Cool and serve with your favorite buttercream frosting.
