Gluten-free, nut-free Chocolate Hamantaschen made with coconut flour and filled with dark chocolate. A traditional Jewish pastry served at Purim.
Preheat oven to 350°F . In a food processor, pulse chocolate chunks, coconut flour, and coconut sugar until you reach the texture of sand. Pulse in shortening and egg yolk until combined.
Roll out dough between 2 pieces of parchment paper to ¼-inch thick. Remove the top sheet of parchment. Cut dough into 2-inch circles using a round cookie cutter. Re-roll the scraps of dough to make more circles.
Place some of the chopped chocolate in the center of each circle. Pinch 3 sides of each circle very firmly to form the dough into a triangle. Transfer triangles (Hamantaschen) to a parchment lined baking sheet.
Bake at 350°F for 6-8 minutes. Remove from oven. Serve!
