Description

This cake is incredibly moist and decadent. I cannot imagine that the packaged, store-bought version could be nearly this good! This cake is totally a “10” in my book! Not only does it taste amazing, but it takes less than 5 minutes to make!

Ingredients

  • 1 whole Egg
  • ¼ cups Applesauce
  • 2 Tablespoons Gluten Free Flour
  • 4 teaspoons Stevia
  • 4 teaspoons Cocoa Powder
  • ¼ teaspoons Baking Powder
  • ⅛ teaspoons Salt
  • ¼ teaspoons Vanilla
  • 1 teaspoon Non-dairy Milk
  • 1 Tablespoon Dark Chocolate Chips

Preparation

Spray a microwave safe coffee mug or similar-sized dish with cooking spray. Note: Glick’s cooking spray is soy-free in addition to gluten-free, so that’s what I use. Put all the ingredients into the mug or small bowl. Mix very well with a fork or small whisk (you do not want chunks of egg or applesauce in there).

Cook in the microwave on high for 2 minutes. Remove it from the microwave and top it with your favorite topping (nuts, non-dairy whipped topping, fruit, etc.). Or enjoy it plain! So good!

I will confess that I’ve given into temptation and made mug cake on more than one occasion, fully knowing that the flour, sugar, oil, and milk were loaded with calories. It doesn’t even hold a candle to oven-baked cake, either, so there’s really no reason to eat it, other than instant gratification. I calculated the calories in this recipe (using almond milk and Ghirardelli double chocolate chips) and when it came in just under 200 calories, I had to give it a try. It was moist and fluffy/custardy (if that even makes sense), compared to dense and spongey. It’s miles better than the “standard” mug cake! Now let’s hope I don’t make it a too frequent habit and save it for a special treat… Thanks for sharing!
