Description

I love pork chops! Especially when they are smothered in brown sugar and crushed pineapple then baked to perfection.

Ingredients

  • 1 teaspoon Salt
  • 1 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 6 whole Bone-in Pork Chops
  • 1 Tablespoon Earth Balance Butter (vegan)
  • 2 cups Brown Sugar
  • 1 Tablespoon Ketchup
  • ¼ cups Apple Cider Vinegar
  • ¼ cups Gluten Free Soy Sauce
  • 40 ounces, weight Crushed Pineapple
  • 1 cup Maraschino Cherries (optional)

Preparation

1. Preheat oven to 350 degrees F.

2. Mix your salt, nutmeg, and cinnamon in a small bowl. Then, lay your meat on a cutting board and season both sides with the spice mixture.

3. Melt your butter in a large skillet over medium-high heat.

4. Place as many pork chops in your skillet that will comfortably fit. Cook for about 1-2 minutes on both sides, or until nicely browned. You don’t need to cook them through because they will finish cooking in the oven. Then, place them in a large glass casserole dish. Repeat with remaining pork chops.

5. In a large mixing bowl, mix together the brown sugar, ketchup, vinegar, and soy sauce.

6. Pour the brown sugar mixture over the pork chops, then both cans of pineapples.

7. Bake for 45 minutes. Garnish with cherries, optional.

I reduced the brown sugar by half and only used 1 can of pineapple and it was still way to sweet. I also reduced the cooking time by 15 min and they were overcooked.

Wonderful recipe! I would have never thought to use cinnamon and nutmeg for this. We actually cooked both pork chops and chicken on the grill using this recipe. I brushed on some of the glaze on one side, then when we turned the meat I poured on the rest and just let it cook. Divine!

I’m not really a fan of pairing fruit with meat, but this was very tasty and my husband loved it too!

This is amazing! I did everything by the recipe, but used chicken breasts – no pork on hand. I was skeptical about using cinnamon and nutmeg in a savory dish, but it was so tasty. My husband is from Kauai, Hawaii and he said this reminded him of his favorite restaurant there. Thanks!

I can’t believe I haven’t reviewed this yet cuz we make it quite often! :) I like to put some red and green bell pepper in it for aromatic appeal and color. I’ll sneak extra veggies in anything tho! Definitely serve over rice with a veggie side and its a GREAT dinner! My husband has this weird fruit and meat aversion but he gobbles this up!
