Description

Quinoa is mixed with fresh vegetables, olives and big chunks of feta cheese to make a tasty healthy dinner that comes together in just 15 minutes!

Ingredients

  • 2 cups Water
  • 1 cup Uncooked Quinoa, Rinsed
  • 1 whole Large Cucumber, Diced
  • 1 pint Cherry Tomatoes, Sliced
  • 1 bunch Green Onions, Chopped
  • ½ cups Olives, Chopped
  • ½ cups Greek Salad Dressing
  • 1 package Crumbled Feta Cheese (6 Ounce Package)

Preparation

In a medium saucepan bring the water to a boil. Add the quinoa, place lid on pan and reduce heat to low. Let it simmer for 10-12 minutes or until all the liquid is absorbed.

Meanwhile, chop your cucumber, tomatoes, green onions, and olives if you haven’t already.

When quinoa is ready pour it into a large serving bowl, pour in salad dressing, add vegetables and feta cheese. Stir lightly and serve.

This can be eaten immediately while still warm. However, if you prefer it cold, just rinse the cooked quinoa with cold water before you combine it with the rest of your ingredients.

I LOVE this salad. It’s simple, fast, and it’s wonderful. I always have to double the recipe because I eat it every day for lunch this time of year. I sometimes use chives since I have so many growing, but that is literally the only substitution I make. The only ADD I’ve ever done is leftover grilled chicken. It IS yummy both warm (if you can’t wait for it to chill) or ice cold from the fridge. You won’t be disappointed.
