Description

These donuts are simple but delicious.

Ingredients

  • FOR THE DONUTS:
  • ¼ cups SO Delicious Coconut Milk, Or Milk Alternative
  • ¼ teaspoons Distilled White Vinegar
  • 2 Tablespoons Earth Balance Butter, Melted And Cooled
  • 1-½ cup Blanched Almond Flour, Honeyville Brand
  • 1 cup Tapioca Flour
  • 1-½ teaspoon Baking Powder
  • 1 teaspoon Sea Salt
  • ¼ cups Sugar Or Coconut Palm Sugar
  • 3 whole Large Eggs
  • ½ cups Warm Water
  • ½ teaspoons Vanilla Extract, Gluten Free
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • 2 Tablespoons Earth Balance Butter, Melted
  • ¼ teaspoons Vanilla Extract, Gluten Free
  • 1 Tablespoon SO Delicious Coconut Milk, Or Milk Alternative

Preparation

1. Preheat oven to 375ºF.

2. Mix the milk alternative and vinegar, set aside.

3. Melt the butter in a microwave-safe bowl. Set aside to cool.

4. Whisk together all of the dry ingredients in a large bowl until well combined.

5. Stir in the eggs.

6. Then, stir in the milk mixture (buttermilk), water, vanilla, and melted butter. Mix well.

7. Grease a donut pan with gluten-free casein-free nonstick spray and fill each donut tin almost full.

8. Bake 13-15 minutes or until browned.

9. Cool a few minutes on a wire rack .

10. Mix all glaze ingredients, adding more powdered sugar to thicken or more coconut milk to thin. Then dip tops of donuts into glaze.

11. Return to wire rack and cool completely.

12. Eat!

Hi megamomma!
Honestly, I don’t know :( But I’d imagine it would be fine. If it seems too thin you might try adding an extra Tbsp or 2 of tapioca flour. If you try it let me know how it turns out!

Hello! My family follows the Primal Blueprint and this recipe is close to fitting that I really want to make it! Do you think I could sub honey or pure maple syrup in place of the 1/4 cup sugar without messing up the consistency?
